All the ingredients used in the preparation of our pizzas are strictly organic and DOC (a certificate that guarantees their origins). We believe that by using only the best ingredients available we can be sure that our clients will only ever be served a genuine product that they can trust as well as enjoy.
The OIL we use is strictly of the extra virgin olive variety which has been cold pressed in the traditional way
Our FLOUR comes from Italian wheat that has been stone ground – a process that imbues the product with particular properties that ensure our pizza bases are crisp as well as tasty.
Every single TOMATO we use, whether puréed or chopped, is carefully selected for colour and flavour.
The CHEESE all comes from selected farms in Campania (the Naples region) that produce top quality mozzarella made from buffalo milk as well as other local speciality cheeses known as “scamorza” and “provola”.
The YEAST we use is the natural kind, and by allowing the dough we make with it to prove for 24 hours or longer, we know that our pizza bases will not only have a delicate and very particular flavour, they will be crispy too.
All our VEGETABLES are bought fresh by our staff on a daily basis – each item specially selected by hand to ensure that only the best make it through our doors onto the table.
OTHER INGREDIENTS: whatever we buy has to be the best that there is and it must be genuine – its the only way we know to make sure that we are always able to satisfy even the most demanding of our customers.
